I have a McCulloch 630, 2 McCulloch 75.2 Customs, an early Konig VC, a Konig HRE, a Merc 135 with louvered covers and Super Speedmaster and 90% of a Mark75H. Also several running regular 75 hp McCullochs.
Over the next few years I intend to acquire a few more triples like a Merc 650XS or 650X and a Crescent.

So far it looks like Steve Roskowski wins with both volume and variety! Great collection Steve! Perhaps if R.C. Hawie added a list of his engines, he could compete with you. He has a massive collection of old racing engines.
I have a limited number of old racers: My original JU engine (KF5), A class Merc as I raced it in the 70s (KG4H), original condition (KG4H), original condition (KG7H), B class Merc as I raced it in the 70s (MK20H), Harrison/Yamaha 250cc of mid-80s, 1st edition Yamato 250cc, 2nd edition Yamato 250cc, 1928 Lockwood Ace (A class), 1928 Lockwood Chief (B class) and 1929 Lockwood Racing Chief (B class).

Small list but lots of fun
Not sure if classics....
1973 25ss raced in 1970's in 25ssh
1978 Yamato Y80 raced in 20ssh starting first year they were legal.

Cool stuff
In this area we have the fingerlakes, the great lakes, and several bays and ponds all fresh water. One of my favorite activities on the occasional off days is pilfering through all the little marinas for survivors and parts that can be used for racing. Very few are race motors but I get hours of cheap entertainment chasing down the right parts and making them like new again. Some of my resent acquisitions include:
A 1941 Mercury kd3, 2 1946 Mercury ke4 7.5hp, a 1957 mark 10 in mercury sunset orange, 2 1973 Mercury 44ci 500 motors, 1 1953 mark 15, 2 mark 20s, 3 45 ci omc, 2 70hp omc, 3 Y 80s, 1 Y 102, 1 44xs, 1 1958 Mercury mark 58a, 1 Mercury super 5 year unknown. Last week I sold a Champion blue ribbon 7.5, a mercury comet kd3, a Wizard wg4, and a 1937 Champion twin deluxe. If any of you guys have similar interests and need parts let me know and maybe I could help.Of all the things I've lost I miss my mind the most.
