Decide what you need first. Are you going to watch it at all times? If so larger numbers on the display are better. If you want one with top speed memory so you only look at it after a run, number size is not important, but the memory feature is.
If all you want is top speed and memory, the Garmin E-TREX series are good. They have been out for several years so there are quite a few floating around and people have upgraded to better models with mapping and much more memory. So E-Trexs are common on E-Bay. You can probably get the yellow E-Trex model for around $60 if you're patient, maybe even get it with a pouch to fasten it to your life jacket
Look On the Garmin web site. We bought and use a garmin wrist watch type. We don't use it as a wrist watch, we mount it on the dashboard. The unit has a larger read out then any I have seen. You can read your speed underway with no strain. It will also give you your top speed achieved and then logs it for future reference. As I recall, I think it was about $100, which is a real bargin, considering how useful it is.

I picked up a GPS at GI Joes for about $99. Now it works great and all however it malfunctions from time to time. Ex. 1: It said I was going 47 in J Hydro @ 30lbs over. (That would never happen) Ex. 2: It said I was going 55 in AXSH w/ the .650 restrictor when the weight was 345lbs. (Highly improbably, probably impossible.) Other than that, I am happy with it and it is pretty accurate.
I also use the Garmin E-Trex. I have used the same unit for about three years now and have never had it fail. It must have a clear view of the sky, so if you stuff to far into your life jacket, it may not read. When I was running FER I would put it in a small zip lock bag for a little extra water protection, and zip tie it to my jacket. This past year I used it mounted on the dash of my champ boat and was very happy with it. The numbers are much too small to read while underway, but the max speed recall is what we use the most. I also have used it as a speedometer in my old pick up truck for the past few years and have found it to always be accurate, at freeway speeds at least.

Yes, this is the unit we use. To set the speed, you have to get into special settings. The speed is in real time and will be in the largest display on top. The numbers are large enough to be easily readable will under way. You can also get the fastest speed achieved and log it for future reference. By the way, it is also water resistent.
