Looking for boat recommendations

I have a curlycraft that my dad and I built abour 40 years ago... looking to build a new hydro to replace it. We run a KG-7H... I want to build a new boat for the motor. Recommendation for a pickle fork design appreciated. Need a good winter project to pass the pandemic. Picture attached of the current setup... goes about 44mph with a 15 year old at the helm.
